Level 3 Award in Food Allergen Management in Catering Topics covered:
These include the manager’s role in ensuring that food ingredients and allergens are effectively managed, procedures relating to the communication of ingredient information from supplier to consumer, the importance of implementing controls to prevent contamination from allergenic ingredients, and the methods for managing ingredient controls and procedures.
Level 2 Award in Health Food and Special Diets Topics covered:
Learners will outline current nutritional guidelines for a healthy diet, describe the impact diet has on health, describe food preparation techniques that maintain the nutritional value of food and understand how to plan and provide meals for those with special diets (including medical needs, allergies, vegans, vegetarians and diets for different faiths).

These qualifications, assessed by multiple-choice Examinations.The examination papers are set and marked by Highfield Qualification. The exams are taken on line and results are instant.
You will be required to produce proof of identity for the course and examination. ID will be required on the day of training. Without the ID you will NOT BE ALLOWED to take the examination. As an example you could bring your driving licence, bus pass, passport, bank card etc.
